Fine Dining!

Cran-Apple Chutney Chicken with Cheesy Chive Potatoes and Steamed Asparagus!


Cran-Apple Chutney:
2 TB Olive Oil
1 TB Ginger
3 TB Apple Cider Vinegar
3 TB Honey
1/2 Cup slivered almonds
1/2 Cup dried Cranberries
1 very sm. red onion chopped
3 gala apples cored and chopped
Pre-heat the pan. Place a medium size skillet over medium-high heat with olive oil. Add the onion and ginger to the pan and cook until the onion has softened, about 5 minutes. Add the apples, cranberries, cider vinegar and honey to the pan with some salt and pepper. Cook the chutney, stirring occasionally, until the apples have broken down and softened, about 10 minutes. When ready to serve sprinkle with almonds.


Chicken:
2 TB Olive Oil
1 lbs, Chicken breast (about 4) seasoned to taste with seasoning salt
1/4 cup parsley chopped
While the chutney is cooking, place a large skillet over medium-high heat olive oil. When olive oil becomes hot, about 1 minuet, Drop the chicken into the hot pan and cook through, about 6 minutes per side. When ready to serve garnish with parsley.


Cheesy Chive Potatoes:
1 lb. baby red potatoes
3/4 cup freshly chopped chives (save 1 tbsp. to garnish top)
1 cup ricotta cheese
4 oz. cream cheese
1 cup real parmesan cheese
Salt and pepper to taste.
Place the potatoes into a large pot and cover them with cold water. Place the pot over high heat and bring it up to a boil. Simmer the potatoes until they're tender, about 10 minutes. Once the potatoes are tender, drain them and return them to the pot they were cooked in. Place the pot over medium heat for about a minute to dry out the potatoes. Toss the chives, ricotta cheese, cream cheese, parmesan cheese, and some salt and pepper in with the red potatoes and mash them good. When ready to serve top with more chives.


Steamed Asparagus:
1/4 lb. asparagus
1/2 tbsp. butter
Salt to taste.
Prepare a steamer with boiling water. Add asparagus; cover and steam for 8-10 minuets or until tender. (Note you do not want it to become soggy so watch it close.) Toss with butter and season to state.
