Mom's Cherry Cheese Pie!

This is another recipe I got from my mother that I absolutely LOVE! I am making this pie for Thanksgiving along with my oreo cream pie (you can find recipe below). I always requested this pie for my birthday. It's even better the next day.
Ingredients:
1 packet of dreamwhip
1 pkg. soft cream cheese
1/4 c. sugar
1 t. Vanilla
2 pkg. graham crackers
1/2 cube butter melted
3 T. powder Sugar
1 can cherry pie filling/topping
Directions: In your kitchenaid mixer (or hand mixer), mix dreamwhip as directed on box to make your whipped cream. Add cream cheese and sugar-mix well. In separate bowl, crush graham crackers into crumbs, mix in powdered sugar. Add butter and mix well. Pat down in pie plate or 9x13 pan. Pour dreamwhip mixture on top and refrigerate for 2 hours. Pour pie filling on top and serve!

Cheddar Apple Dip
1 tub (8 oz.) PHILADELPHIA 1/3 Less Fat than Cream Cheese
1/3 cup plain yogurt
3 Tbsp. brown sugar
1 Tbsp. pumpkin pie spice or Cinn
2 apple, chopped, divided
1/2 cup Milk Shredded Cheddar Cheese
1 small bag finely chopped Pecans divided
Whatever Original Crackers you want
HEAT oven to 375°F.
MIX cream cheese, sugar, and spice in medium bowl until well blended. Stir in 1 apple, and half nuts.
SPREAD into pie plate or small casserole dish; top with remaining apples, Cheddar and nuts.
BAKE 10 to 12 min. or until heated through. Serve with crackers

Cinnamon Swirl Pancakes

You gotta try these....Seriously! They are so yummy and the presentation is lovely. Made these for Thanksgiving breakfast, and making them again for Christmas morning breakfast!
Cinnamon Roll Pancakes:
1 cup unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups buttermilk
2 tablespoons butter
1 egg, lightly beaten
1 tablespoon honey
Cinnamon swirl:
2 tablespoons melted butter (Instead of butter we used a little milk to thin it out)
1/4 cup brown sugar
1 teaspoon cinnamon
1 tablespoon flour
(you may want to double up on the swirl recipe. One recipe will do about 5 pancakes)
1. Mix all the ingredients together to make the pancakes and set aside. Preheat your pan or skillet and lightly grease it.
2. Make the Cinnamon Swirl mixture and place it into a a small bottle with a squirt nozzle (the name is escaping me...I used one)or a small baggie with a snip in the corner.
3. Spread your batter into small pancakes on the griddle. Immediately add the cinnamon swirls.
4. Cook the pancakes until small bubbles form on the topside of the pancake and do not fill back in with batter.
5. Flip over the pancakes with a turner and cook for another 30 seconds to a minute.
These taste good without any syrup on them, but you could melt down a favorite frosting and drizzle it over the top.

Snickerdoodle Cupckaes
Ingredients:
1 white or vanilla cake mix
1 cup milk
8 table spoons (1 stick) butter, melted
3 eggs
1 teaspoon vanilla
2 teaspoons cinnamon
Directions: Line your muffin tins and preheat oven to 350.
Mix all engredents for 1 minute on low then scrape down sides. Continue to mix for 2 more minutes. Pour into muffin liners about 3/4 full. Bake for about 25-29 minutes.
Cinnamon Buttercream Frosting
Ingredients:
8 tablespoons butter, softened
3 3/4 cup powder sugar
3-4 tablespoons milk
1 teaspoon vanilla
1 tablespoon cinnamon
Directions:
Cream butter with milk and vanilla. Add powder sugar and mix on low to incorporate. When mixed, add cinnamon and more milk if too thick. Mix on medium for about 3 minutes to lighten it.
If you LOVE Cinnamon then you will die over these!!
Carrot Cake w/ Cream Cheese Frosting
Ingredients:
4 eggs
¾ cup applesauce
1 8 oz can crushed pineapple, drained well
3 tsp vanilla
1 cup sugar
1 cup brown sugar
2 cups flour
2 tsp baking soda
2 tsp baking powder
½ tsp salt
3 tsp cinnamon
¼ tsp nutmeg
3 cups shredded carrots
1 cup chopped pecans (optional)
Directions:
Combine first seven ingredients in a large bowl and mix until well combined. In a separate bowl combine flour, baking powder, soda, salt cinnamon and nutmeg. Stir dry mixture into wet mixture. Fold in carrots and nuts. Spread into a greased and floured 9x13 in. pan and bake at 350 degrees for 40 to 50 minutes.
Cream Cheese Whipped Cream Frosting
Ingredients:
1 8 oz package cream cheese or reduced fat cream cheese
½ cup powdered sugar
1 tsp vanilla
½ tsp almond extract
2 cups heavy cream
Directions:
With regular mixer beaters, mix cream cheese, powdered sugar, vanilla and almond extract in a large bowl until smooth. Change beaters to wisk attachment. Add cream to cream cheese mixture and whip on medium-high speed, stopping to scrape bottom and sides of bowl as needed. Whip until frosting can hold a stiff peak.
This is the best I have every tasted!!!

Overnight Baked French Toast
Ingredients:
1/2 cup softened butter
1 and 1/2 cups brown sugar
2 tsp cinnamon
1/2 cup chopped pecans
1/2 cup softened butter
1 and 1/2 cups brown sugar
2 tsp cinnamon
1/2 cup chopped pecans
4 oz. cream cheese
12 pieces of Texas Toast
8 eggs
1 tsp vanilla
1 and 3/4 cups milk
Directions:
Mix brown sugar and cinnamon. Add butter and stir well. Sprinkle in pecans.
Spread the sugar mixture on bottom of a 9 by 13 inch glass pan.
Place bread on top of sugar 2 pieces thick and spread cream cheese in the middle.
Beat eggs until fluffy and add milk and vanilla. Pour over the bread. Cover with plastic wrap and refrigerate overnight.
Uncover the next day and sprinkle with cinnamon. Bake for 45 minutes at 350 degrees.
Serve.
This is incredibly delicious!!
Hawaiian Haystacks
1 lb chicken cut up small
1 can cream of chicken soup
1 can chicken broth (only if chicken is not frozen)
2 tablespoons parsley
2 tablespoon basil
1 teaspoon garlic
Place in crock-pot and cook 4-6 hours
Shred chicken before serving
4 cups of long grain white rice (follow directions on pkg)
1 1/2 cups of everything listed below
Chop all in bite size pieces
Coconut
Cilantro
Olives
Celery
Pineapple
Cheese
Bell Pepper
Tomato
Green onion
Slivered almonds
Chinese crunchy noodles
Put rice down first, then the chicken gravy mixture, then all the sides you desire!

Healthy Snacks
Wonder balls
1 small jar peanut butter
1 cup honey
1/2 cup flax seeds
1 bag of whatever crushed nuts you like (pecans, almonds, walnuts)
1 bag dried fruit you like crasins for raisins or whatever
1 bag of whatever chocolate you want (dark, medium, white)
2 cups uncooked oatmeal
Big Bowl--mix PB and honey stir
Add Flax and oatmeal stir
Add chocolate, fruit, and nuts stir
Make cookie dough like balls, put in Tupperware with wax paper in between each set. Place in freezer for 4-6 hours.
If you refrigerate them they will be softer.

Broccoli Slaw
1 pkg broc slaw
1 pkg pine nuts
1 cup bacon crumbles
1/2 cup red onions diced small.
Non fat plain yogurt mix to your liking
salt and pepper to taste
Mix all together and toss
Chill

Mock Ice Cream Sandwiches
1 pkg of any kind of gram crackers you like (reg, chocolate, cinnamon)
1 tub of any kind of whip cream you like (plain, chocolate, strawberry, vanilla)
Mix and match any ways you prefer!!!
Take one gram and break it in half then add a dollop of whip cream on it. Put the other half of the gram on and press slightly down. Do this until all the grams are gone in the box. Place in Tupperware and put in the freezer 4-6 hours.
Dessert Ideas
Sweet Cheese Ball
2 pkg cream cheese softened
1 pkg vanilla instant pudding mix
1 cup powdered sugar
1 can crushed pineapple drained
1 cup Finley chopped pecans
1/2 pkg of chocolate chips
1 box gram cracker sticks
In medium bowl mix the first 4 ingredient--freeze overnight
After removing from freezer mold into shape
Mix pecans, choc. chips together
Roll in mixture
Use grams for dipping!

7 Layer Cookie
4 ounces butter
1 1/2 cups graham cracker crumbs
1 (6 oz.) pkg. chocolate chips
1 (6 oz.) pkg. butterscotch chips
1 small can shredded coconut (1 1/3 cups)
1 can (14 ounces) sweetened condensed milk
1 to 1 1/2 cups chopped pecans
Preheat oven to 350°. Melt butter in 9x13-inch baking pan. Sprinkle graham cracker crumbs over melted butter; spread crumbs with chocolate chips, then butterscotch chips. Sprinkle coconut over this, then drizzle the sweetened condensed milk evenly over all. Sprinkle with the chopped pecans. Bake for about 25 to 30 minutes. Cool and cut in 1 1/2-inch squares.

Pretzel Raspberry Jello
3 cups crushed pretzels
3/4 cup melted butter
3 T sugar + 1/2 cup divided
8 oz cream cheese softened
8 oz sour cream
1 pkg raspberry jello
2 cups boiling water
1 10oz bag frozen raspberries partially thawed
8 oz cool whip
combine pretzels, butter, and 3T sugar--spread at bottom of baking pan. Bake 400 for 8 min. Then cool. Mix cream cheese, sour cream and 1/2 cup sugar, beat until smooth. Spread over cooled crust refrigerate 1/2 hour. In bowl add water to jello and stir until dissolved and add partially thawed fruit and let set up in fridge until a little thickened. Pour over cream cheese layer and refrigerate 4-6 hours. 30 min before serving take out and put cool whip on top and put back into fridge until ready to serve.
I know its seems like a lot of work but its sooo worth it.
DELECTABLE!
Dinner Ideas
Mom's Enchiladas
1 pkg tortillas
1 bowl-- 3 shredded chicken breast
1 lb shredded cheddar cheese
1 bunch chopped green onions
2nd bowl-- 2 cans cream of mushroom or chicken soup
1/2 pint sour cream
1 can of diced green chilies
Mix small amount of sauce with chicken mix (like tuna fish salad)
grease 9x13 pan and spread sauce on bottom.
put about 1/3 cup of chicken into sauce
Mix into each tortilla roll and place in pan seam side down.
Pour remainder of sauce on top of enchiladas
Sprinkle with sliced olives
Optional: Sprinkle with shredded cheese too.
Bake 350

Sweet and Sour Chicken
Wash and skin 8 boneless chicken breast
cut each breast into 3-4 pieces
Dip in egg then corn starch
Fry in hot grease until golden brown
Lay in heavy 9x13 pan
Mix the following
2 cups sugar
1/2 cup vinegar
1 cup ketchup
1/4 cup soy sauce
1 cup chick broth
1 cup tidbit pineapple
Pour sauce over chicken
Bake 325 2 hours
Make a tent with aluminum foil
Do not touch it after one hour
Serve with rice
YUM!

Bubble Pizza
You can do this with any of your favorite Pizza flavors! (Hawaiian, Meat lovers, ect.)
2 cups pizza cheese
1 pkg browned sausage
1 jar pizza sauce
2 tubes buttermilk biscuits
Add any veggies you like (bell pepper, onion, olives, mushrooms ect)
Brown and drain meat
Cut 2 tubes of biscuits into quarters
put biscuits in bowl along with pizza sauce.
Add meat and any other toppings
Mix together well
Pour in baking dish un-greased
Bake 350
20 min
Pull out and add cheese to top
Bake 10 more minuets.
DELICIOUS!
Hope that gives you some dinner ideas...that's the hardest part I think...is coming up with something to make or cook!
Cinnamon marshmallow puffs
Okay, these are seriously so delicious and ten times easier than making cinnamon rolls. Just watch them because ovens vary and these could be done in less time in your oven. They also are a bit messy as they will ooze in your oven, so put some tin foil down under them. Enjoy!
1 (8 ounce) package refrigerated crescent dinner rolls
- 8 large marshmallows
- 1 tablespoon ground cinnamon
- 1/4 cup sugar
- 3 tablespoons melted butter
Directions
1
Preheat oven to 375°F.2
Combine sugar & cinnamon in a small bowl.3
Place cupcake liners in muffin tin.4
Spray liners with Pam.5
Separate rolls into 8 triangles.6
Place marshmallow into melted butter.7
Roll marshmallow into cinnamon/sugar.8
Place marshmallow on crescent roll.9
Pinch dough up around marshmallow.10
Encase.11
Seal seams by pinching.12
Dip the tops of dough into the butter.13
Then into the cinnamon/sugar.14
Place in muffin pan w/cinnamon/sugar side up.15
Bake at 375°F for 13-15 minutes.
Easter Brunch Casserole
- I found some really awesome recipes for Easter brunch this year. This one was so so good. Thought I would share. Serve this up with bacon, sausage and my cinnamon marshmallow puffs. So yummy!
- 8 slices bread, cubed
- 1/2 cup butter, melted
- 2 cups milk
- 1/2 teaspoon salt
- 1/2 teaspoon dry mustard
- 5 eggs
- 1/2 lb cheddar cheese, grated
- 2 cups diced ham or cooked sausage
- 4 ounces mushrooms
Directions
1
Grease 9 x 13 glass pan.2
Mix bread with melted butter.3
Add cheese, ham or sausage, and mushrooms.4
Place in baking dish.5
Mix and beat eggs.6
Add milk and seasonings.7
Pour over mixture in pan.8
Cover with foil.9
Refrigerate overnight.10
Bake 1 hour @ 325°.11
Remove from oven.12
Let stand for 10 minutes.13
Do not overbake.
