Rhubarb Crunch

This recipe is so yummy! I have also had this one forever and it's super tasty...

You will need:

4 cups rhubarb

Crust:
1 cup flour
3/4 cup uncooked oatmeal
1 cup brown sugar
1/2 cup melted butter
1 tsp. cinnamon

Sauce:
1 cup sugar
2 tbsp cornstarch
1 cup water
1 tsp vanilla

Mix the ingredients for the crust together and make crumbs. Press a little less than half of the mixture into the bottom of a 9x9 inch pan. Save other half of crumbs for later in the recipe.

To prepare the rhubarb: wash, cube and put all 4 cups of it on top of the prepared crumbs.

To make the sauce, get a small-medium saucepan and combine the sugar, cornstarch, water and vanilla. Cook until it turns clear. Pour over the rhubarb. Cover with the remaining crumbs.

Bake at 350 degrees for 50 minutes
